Pitta Toasts by Family Weller
Sugar pitta toasts
– 2 pittas sliced in half
– 2 tbsp olive oil
– 2 tsp maple syrup
– ½ tsp ground cinnamon
Parmesan pitta toasts
– 2 pittas sliced in half
– 2 tbsp olive oil
– 4 tbsp grated parmesan cheese
Instructions:
1. Preheat the oven to 180C, then slice the pittas in half, length ways.
2. Sugar toasts – in a small dish mix the 3 other ingredients together and then brush the inside of the pittas with the oil mixture so they are lightly covered.
3. Parmesan toasts – brush the pittas with the oil so they are lightly covered. Then sprinkle approx. 1 tbsp of cheese over each pitta side evenly.
4. Place the pittas onto a try lined with baking parchment and put in the oven at 180C for 20mins. Check after 10 mins to make sure the oven is not too high. Then leave them in the oven until they are crisp and cooled.
5. Gently break the toasts into small crackers and store in a tin for up to a week.

Granola Bars by Family Weller
Ingredients:
– 4 cups of large oats (or small oats if you don’t have large)
– ½ cup of shredded coconut
– ½ cup of sunflower seeds
– ½ cup of pumpkin seeds
– 1 cup of chopped nuts- almonds, pecans, cashews
– ½ tsp of vanilla extract
– ½ tsp of cinnamon
– ½ tsp of salt
– ½ cup of olive oil/ mild flavoured oil
– 1/3 cup of honey/ maple syrup
Instructions:
1. Preheat the oven to 350 F (180 C)
2. On a large baking sheet covered with grease- proof paper, combine the oats, coconut, seeds, and nuts and mix well. Add the vanilla, honey, oil, and salt. Use your hands to mix all the ingredients together until the oats are evenly coated. Then use your hands to flatten the mixture in an even layer on the pan.
3. Bake for 10 minutes. Remove from the oven and use a spatula to move the granola around the baking sheet, pushing the granola on the edges into the centre and vice versa.
4. Reduce the oven temperature to 325 F (165 C) and bake for 10 minutes longer.
5. Remove the pan from the oven again, move the granola around the pan as before, and return the pan to the oven.
6. Bake for 10 minutes longer until the granola is golden and crisp, about 30 minutes in total. The oats should be toasty and brown but be careful not to burn them! Remove from the oven and let cool completely, about 10 minutes.
Extras: If you would like to, you can add any additional toppings; we recommend chocolate chips/ sliced or shaved chocolate or sultanas. Add these in after the granola has cooled down to ensure the chocolate doesn’t melt!
